Au Lac Restaurant is an interesting East-West fusion that serves beautiful and delicious vegan food. Each dish is wonderfully prepared with complex and unique flavor combination.

What makes Au Lac stand out is the exciting and diverse offering of vegan living foods that also taste good. When food is cooked to a temperature of less than 118ºF, the nutrients are not destroyed. These vegan living foods are “alive, full of life forces, enzymes, vitamins and minerals.”

Everything at Au Lac Restaurant is plant-based, using organic produce and natural ingredients. Cooked or non-cooked, it shows in the food the level of thoughtfulness that have gone into the making of food that’s vegan, tasty, and healthy. The food here is never too oily or heavy. You actually feel good and vitalized after the meal. It’s a really wholesome dining experience.

Ever tried the famous Vietnamese Pho? It’s hard to find a nice bowl of pho that is not made with meats. The broth here tastes as good as the one out there, except it’s completely vegan and healthier too.

For vegan living options, I have tried the Green Pyramid wild rice with Thai basil pesto, coconut, zucchini, corn, bell pepper, dulse and flax crackers. I was told the rice is pre-soaked, not cooked. It’s pretty interesting and tastes surprisingly good!

I really like the So Green Blend and Hemp Mac Milk from the drink menu; each comes with a unique taste and is equally good in its own way. For the dessert department, I have tasted the Rainbow in the Sky, with its layers of blueberry, raspberry, coconut and spirulina over a moist crust of pecan and dates. That dessert is so delicious and light that I can indulge in — almost guilt free!

The creative force behind the remarkable menu at Au Lac Restaurant is Chef Ito. I have never met the chef, but from what I’ve learned, Chef Ito appears almost as a mystical figure who has taken a vow of silence and stopped having verbal communications. Chef Ito describes the food as “humanese” cuisine based on his philosophy that we all have more in common than we realize. Coming from these backgrounds, the carefully crafted menu is both spiritual and mouthwatering, yet beneficial for the body and soul.

I have been to the original Au Lac Restaurant in Fountain Valley and also the new location in downtown LA. Both places are awesome, with nice ambiance and great service, not to mention great food! I was told they are frequented by celebrities, especially in downtown LA given the proximity to Hollywood. The pictures here are taken from the downtown LA location. Maybe it’s still early in the day, or I’m just out of luck, I have not spotted a star yet.

Prices are slightly on the higher side, so it’s not exactly cheap eats. But for the quality of food on the table, it’s well worth the buck. Once a while, it’s a good way to recharge and nourish the body — and soul — with wholesome food made with quality ingredients. At the end of the day, you are what you eat. So, eat wise and eat good!
